Healthy no-bake chocolate strawberry macaroons
I have to admit that the COVID-19 pandemic rocked my world this year. Between needing to adapt to a new schedule and essentially, a new way of living, it’s been pretty stressful to say the least.
I even felt like I had gained a few lbs from mindless eating those first couple of months. Which was why I had decided to take up my healthy lifestyle again.
With that said, I have been greatly limiting my consumption of sweets, chocolate in particular. However today, I needed something to satisfy my sweettooth…and darn it, I deserved it. 🙂
These healthy no-bake chocolate strawberry macaroons are insanely easy to make, have only 7 clean ingredients, and taste amazing.
Between the chewiness of the freeze-dried strawberries and the coconuts, I would say that the texture is out of this world good.

So what will you need for this recipe? well you can put away those baking pans because you will not be needing them for this recipe.
Instead, grab some parchment paper and a plate–because you’ll be sticking these bad boys in the freezer instead.
Grab the following ingredients:
- Chia seeds
- Shredded coconut or coconut flakes (unsweetened)
- Vanilla extract
- Maple Syrup
- Coconut Oil
- Dark chocolate
- Freeze dried strawberries

I have to admit that these healthy no-bake chocolate strawberry macaroons make the perfect sized dessert.
I believe that we should enjoy all the good things in life–in careful moderation. Dessert is no different.
Although these are healthier than your average dessert, they are still a sweet treat so enjoy a couple at a time…Although I may have had slightly more than that!

I love using coconut in my desserts. One of my favorites are these famous 3-ingredient healthy samoas I made last year.
Without further adieu, here is the recipe for these perfect little guys!
Healthy no-bake chocolate strawberry macaroons
These healthy no-bake chocolate strawberry macaroons are next level good. With only 7 clean ingredients, you can check your guilt at the door when you indulge in these.
- 1 tbs Chia seeds
- 2 tbs Milk of choice (I used almond milk)
- 1.5 cups Shredded coconut (You can use flaked coconut as well. Unsweetened)
- 2 tbs Maple Syrup
- 1 tbs Coconut Oil (Softened )
- 1 tsp Vanilla extract
- 16 grams Freeze dried strawberries
For the chocolate dip & drizzle
- 1/2 cup Chocolate chips
- 1 tbs Coconut Oil
-
Begin by mixing the chia seeds with the plant based milk and setting aside until a gelatinous paste forms.
-
In a separate bowl, mix the coconut, vanilla extract, maple syrup, and coconut oil. Add in the chia seeds and fold in the freeze dried strawberries.
-
Form into balls (or shape of choice) and place on parchment paper–stick in the freezer.
For the chocolate dipping sauce
-
Add chocolate chips to a microwave-safe bowl, add coconut oil and melt until smooth.
-
Dip the macaroons halfway into the chocolate and place back on the parchment paper. Drizzle with the rest of the chocolate. The chocolate should harden up quickly but sticking them back in the freezer speeds up the process
