I don’t know about you, but I LOVED Girl Scout cookies when I was growing up. I’m also pretty sure I sold them at one point when I was a brownie (a level below a girl scout).

As I got older and began to worry about ingredients though, I was appalled at the ingredient (sorry girls, no offense) and really stopped buying them after that.
Samoas were always my favorite and there were times I missed how they tasted. Someone had shared this healthy 3-ingredient Samoas recipe with me last year and I decided to share it with all of you!
It’s EXTREMELY easy to make because It’s no bake and takes just a few minutes to prepare.
What you’ll need:
- 1 cup shredded and toasted coconut
- 1 cup pitted dates
- 1/4 cup melted chocolate
Literally all you do is mix the first 2 ingredients together, form into cookies, make a hole, and stick in the freezer for 10 minutes. Then, dip each one (one side only) in the melted chocolate and drizzle some on top.
Easy right? I love that they are chock-full of healthy fats from the coconut as well as potassium, magnesium, and selenium from the dates.
These do taste VERY sweet to me so I usually only need 1 or 2 for my sweet tooth to be satisfied for the entire day.

If you like this recipe, would love it if you could pin and share with a friend! Thanks my sweet friends!
3-ingredient Healthy Samoas
A healthy but super tasty twist to the Girlscout Cookie favorite! This version contains just 3-ingredients packed with healthy fats, vitamins, and minerals. Best part, all you need is one to feel fully satisfied!
- 1 Cup Shredded coconut (Lightly toasted)
- 1 Cup Dates (Pitted)
- 1/4 Cup Chocolate Chips (Melted (I used semi sweet))
- 1 tsp Coconut oil (Optional, for melting chocolate)
-
Begin by adding the coconut and dates to a food processor. Mix well until mixture is sticky and can form perfect cookies.
-
Form each one into a cookie, flatten, poke a hole through each one, and stick in freezer for 10 minutes.
-
Melt the chocolate with a little coconut oil (optional) and dip each cookie on one side. Finish off by drizzling chocolate on the top and stick in the freezer for another 10 minutes to allow chocolate to harden. Serve.
