Who doesn’t love teddy grahams? they’re so cute and cuddly and taste absolutely delicious!
I was digging up some old recipes the other night, and decided to make these healthy chocolate teddy grahams all over again. These baby bears are gluten free, vegan, refined sugar free, and toddler (and husband) approved!
As a Mom of a toddler, I’ve learned very quickly that food with a cute shape is twice as fun to eat. If only I was skilled at sculpting a brussel Sprout to look appetizing, my Son and I, might be able to stomach them. For now though, I’ll stick with the easy stuff like cookies and use healthier ingredient alternatives, they’ll never tell the difference :).

What I love about them is that you can make them as sweet as you’d like and they’d still taste good! As I’ve mentioned before in previous posts, baking is my stress reliever. It’s like therapy except you end up with a sweet treat at the end for yourself and your loved ones…so everyone wins!
I used tapioca flour as one of the main ingredients for these teddy grahams and although It’s a very light flour, it makes for a very dense dough which can be easily rolled out onto a cookie sheet and cut into whichever shape you’d like… I just chose teddy bears because they’re cute and cuddly.

I also took a few of these with me to a recent event where I had some close family members try them. Much to my delight, they loved them and asked me to bring more next time we had our get together.
I’m not going to lie, when people tell me they love my cooking or baking, I get all giggly and bashful…surely they can’t be talking about MY cooking. I guess I don’t receive compliments very well …about anything really. In fact, unless coming from my Husband or parents, I really hate getting compliments. Don’t get me wrong, I do like to hear I do a good job once in a while, but meh, I could care less.

If you do decide to try these babies out, I recommend purchasing a small cookie cutter. Here’s where I bought mine: Check them out here.
Now you’re going to want to keep these in the oven for long enough that they harden up and get crunchy. The first time I made these, they came out soft so they were lacking that true “teddy graham” crunch. Try to make them as thin as you can as well because the thinner, the crunchier.

You can pack these up to go so that you always have a healthy snack nearby when you have the craving and aren’t walking to the vending machine for some oreos at 2pm. You feel me?
