Best homemade granola bars

This is the best homemade granola bar recipe.

I mean, is there anyone out there who doesn’t appreciate a good homemade granola bar anyway? (I’ll wait).

The COVID-19 pandemic has turned me into quite the foodie the past couple of months…and I’m not complaining at all.

I was sitting and dreaming of the time I was fully plant-based for a few months and all the tasty recipes I was making. Then I thought…Hey, I’ve been buying a lot of packaged granola bars lately, why not make my own?

I have tried many homemade granola bar recipes in my time–many of which came out good while others flopped.

This time, I decided to finish up some of the ingredients sitting in my pantry before they went bad. At the beginning of the coronavirus nightmare, we went out and bought loads of oatmeal—much of which we now actually have to eat…go figure :).

These bars are perfect for breakfast or just as a snack when your cravings hit! I personally enjoy them right before a workout.

Made with just 5 clean ingredients, I don’t have to worry about all the extra crap the store bought kind usually adds.

Here’s what you’ll need to make these homemade granola bars

  • 1 and 1/3 cup of quick cooking oats
  • 1 cup raw almond butter
  • 1/2 cup honey
  • 1 cup almonds
  • 1/3 cup chocolate chips
  • Splash of vanilla extract, salt, and cinnamon

All of this can be made without heat–although I did choose to briefly “cook” my wet ingredients to help them coat the oats better and mix more easily.

As far as kitchen tools go…a mixing bowl, brownie tin, and a saucepan (if you plan on heating it) will do.

I was disappointed to discover that I had lost my brownie tin–probably lost it sometime during our move a couple of years ago. Luckily, I had some Tupperware on hand to press these bad boys into.

Without further adieu, Here’s the recipe for these heavenly homemade granola bars!
