I’ve been going crazy for these spicy vegan curried lentils lately.
It’s safe to say at this point in my life, that I’ve been maintaining an 80% plant-based diet. For about 3-months last year, I had completely given up all meat, dairy, and gluten (I’ll have a post on my experience with this coming out soon) and although I still don’t really eat dairy, I did start incorporating meat and gluten in very limited quantities.
During this time, I began experimenting with primarily vegan/plant based dishes. I have always been a sucker for a good curry dish so when the craving began getting overwhelming, I figured I would use what I had on hand to make my own twist on my classic favorite. The result? a whole lotta yumminess.
I love to serve them with basmati rice for a more authentic experience. My Middle Eastern family has been eating basmati rice for several years now. It’s aromatic taste makes it a whole ethnic experience in and of itself!
I’m going to keep this intro for these spicy curry vegan lentils short and sweet because I know you just came here for the recipe! 🙂

I like to purchase my lentils pre-cooked because I do not have time available to soak and cook most days. I simply purchase a pre-cooked bag from my local Trader Joes.
This simple step saves me SO much time and I value any opportunity I can find to cut corners.
I always add the lentils to vegan curried lentils recipe last.
