Banana Skillet Bread – Dairy & Refined Sugar Free

I walked by the kitchen table this morning and noticed 2 extremely over-ripe bananas. So I did what any normal baking-obsessed Mom would do, I made banana bread.

Since I didn’t have any other baking dish readily available to me, I decided to use my wonderful skillet. So, I’m going to call this recipe my Banana Skillet Bread.

My life lately

We’ve been staying at my in-laws the last 3 months as we complete some renovations in our new house. This means that eighty percent of our belongings are boxed in their garage.

At first, this gave me severe anxiety as I hated being away from my “stuff”. However, after a few weeks, I got used to not having my things at my disposal and instead, really learned how to live as a “minimalist”.

I recently learned that food baked in the skillet bakes much faster when compared to other bake ware. In fact, this baked rather quickly.

What you’ll need for this recipe

  • Bananas
  • Eggs (although egg subs can be used)
  • Vanilla extract
  • Coconut Sugar
  • Maple Syrup
  • Flour of your choice
  • baking soda
  • Coconut oil (using that over butter is what makes this recipe dairy-free)

You can also add extra ingredients like nuts or raisins. I decided to be extra (as my husband lovingly calls me) and topped with dried figs, pecans, and coconut flakes. I mixed in some pecans and dried figs in the actual batter itself.

*Tip: I personally like my banana breads dense but if you don’t, you can use fewer wet ingredients and make sure you don’t over-stir.
