As my little one turned 3 months old the other day, I found myself experiencing a wide array of emotions. I’m currently stuck between being happy that he’s becoming more interactive each day, and sad that the days are going by entirely too quickly.
With Spring just around the corner, we’re looking forward to longer days spent outside with the kids and entertaining family and friends. I want to make sure I cherish every single moment spent with my loved ones so that I live with no regrets in the future.
As far as health and wellness is concerned, I am happy to report that I have been sticking to a healthy diet overall… with the occasional indulgences.
In order to stay on track but still keep my family entertained and well fed, I’ve found ways to create healthy dishes that still taste great and are easy to prepare.
I admittedly love salty foods but don’t like to munch on chips or crackers because of all the added calories and ingredients. I find that olives are satisfying when I’m craving a salty snack but don’t want to absolutely demolish the clean eating habits I’ve worked so hard to uphold.
I found these Musco Family Olives Peals® to be extremely tasty and versatile to use in different recipes.
I like to serve the olives as finger food with other healthy dishes including salads and appetizers.
The olives that I picked up are plump, juicy, and stuffed with garlic. When I say that this is the best combination, I am not lying.
Garlic parmesan olive tapenade
In an attempt to create something outside of the box (for us), I decided to try my hand at a tapenade this past weekend.
According to Dictionary.com, a tapenade is defined as a “Provençal paste or dip, made from black olives, capers, and anchovies”.
I served it with some lightly toasted French bread and can honestly say I was BLOWN away. I love that these already have garlic in them–it made preparing the ingredients for the tapenade even easier.
Garlic Parmesan Olive Tapenade
Garlic lovers rejoice! this tasty garlic parmesan olive tapenade is the perfect compliment to any savory dish and can be enjoyed as a spread or dip for your favorite bread or chips.
- 1 jar Musco Family Olives
- 4 tbs Shreeded Parmesan
- 2 tbs Red onion chopped
- 1 tbs lemon juice
- 1 tsp black pepper
Combine all ingredients in a food processor until well blended. Top with parsley and use as a spread or dip.
