Healthy pumpkin smoothie bowl. That was all I wanted today.
It was one of those days that was just a blur to me. For starters, I’m nearly 35 weeks pregnant and barely sleeping at this point.
I woke up from what seemed like a 10-minute cat nap this morning practically forgetting it was Halloween. It wasn’t until I drove up to work and noticed my bumble-bee dressed coworker.
Oh yes. How could I forget! I can honestly I haven’t been this tired in my life and there is nothing exaggerated about that!
Anyway, because of my crushing fatigue, my Midwife suggested that I needed to up my vitamin intake and increase my exercise regimen. Wait what exercise regimen? I haven’t worked out for the last 8 months..because who has time (or energy) for that?
I opted to increase my daily vitamin intake instead. This healthy pumpkin smoothie bowl was a huge hit. For starters, it literally tastes like pumpkin pie without all the added guilt and empty calories.
Afterall, pumpkins are an excellent source of essential vitamins and minerals such as:
- Vitamins A, C, & E
They are also high in fiber which is super important to have especially in pregnancy (ladies can I get an amen?).
I generally love smoothie bowls and make them quite frequently but this time, I decided to make one with a Fall twist. I feel so silly giving the recipe for this–Afterall, smoothie bowls almost always contain pureed fruit/veggies mixed with your milk of choice and sweeteners.
Nothing else to it! but It’s ok, I Google everything too!
