Just added another favorite Fall recipe to my list! I’m calling these my vegan apple pie cranberry crumble bars…and boy are they crumbly!! We’ve had an abundance of apples lately–Gala and Honey Crisp to be exact– So I decided to use them in this recipe.
I wanted to get this recipe to you guys sooner but I woke up to a dead laptop yesterday which was absolutely un-salvageable. The good news is that I finally got a new laptop after putting up with my slow clunker of a computer for the past 7 years.
What you’ll need:
What I like about these bars is how incredibly easy they are to make. You only need a few simple ingredients to work with–all of which, can be swapped out for whatever you happen to have in your pantry that’s equivalent.
- Vegan butter
- Brown Sugar
- Vanilla extract
- Oat Flour
- Fall favorite flavored cereal of choice
For the crust:
I began by melting my butter and whisking it with the brown sugar until the consistency became really smoothe. I then added my vanilla and sifted flour mixing until well combined.
The texture should be similar to dough. I then pressed it at the bottom of a lined 8×8 brownie tin and baked for 15 minutes at 350 degrees.
For the filling:
The organic apples we recently purchased were pretty small. I used about 5 but if you’re working with medium to larger size apples, 4 should be enough.
I simply peeled, cored, and thinly sliced the apples and tossed them with more flour, brown sugar, and cinnamon.
They smelled divine!
For the crumbly topping:
This part was super easy. I simply added my cranberry crunch cereal of choice to my nutribullet and pulsed a few times until the cereal became a crumbly consistency.
Meanwhile, I removed the crust from the oven and topped it with the apples. I tried my best to create several layers when doing this to ensure that the bars were thick with apples.
I then added the crumbled cereal on top making sure to cover the top really well. Afterwards, I popped it back into the already heated oven for about 45-50 minutes. You can keep it in there for longer if needed, or until the top starts to brown.
I must admit these came out pretty tasty. I do want to give you fair warning that my version came out a bit too crumbly. What I would recommend is perhaps mixing a bit of butter or oil of choice with the cereal in order to have it stick together better however that part is optional.
I served these with a side of tea and my dear Hubby loved them!
Vegan Apple Pie Cranberry Crumble Bars
These bars are the perfect fall treat and combine the tart flavor of cranberries with the sweet taste of honey crisp and gala apples. Bet you can't eat just one.
For the Crust
- 1.5 cup Oat Flour Sifted
- 1/4 cup Brown Sugar Or granulated sugar of choice
- 1 tsp Vanilla Extract
- 1/2 cup Vegan butter of choice softened
For the Filling
- 5 Apples Peeled, cored, and sliced thinly
- 1/4 cup Oat Flour
- 1/4 cup Brown Sugar
- 1 tsp Cinnamon
For the topping
- 1 cup Cereal of choice crushed
Begin by melting the butter and then mixing with the brown sugar. Whisk until a smooth consistency forms.
Add in the vanilla, stir, and then add in the oat flour. Mix until well combined. The consistency should be like a clumpy dough.
Press crust mixture into a lined 8x8 brownie tin and bake for about 15 minutes at 350 degrees.
While you wait for the crust to bake, begin preparing the filling by tossing the apples with the flour, sugar, and cinnamon.
Then, pour the filling on top of the baked crust.
Finally, gently pulse your cereal of choice in a small blender until crumbly consistency is reached.
Pour the cereal on top of the mixture making sure to cover evenly. Pop back into the oven for about 45-50 minutes or until the top is golden brown. Slice.
