Is there anything in life more decadent and delectable than a brownie? I’m pretty sure there Isn’t.
With the third trimester of this pregnancy creeping up in just a few days, the discomfort I’ve been experiencing is increasingly getting worse. Simply rolling over in bed has become a daunting and painful task requiring me to seek assistance from my wonderful hubby.
In my last pregnancy, I gained a whopping 50-lbs and only lost about 30 afterwards. For the past 2 years, I have been carrying around that extra baby weight that I never fully ended up losing despite the long hours I spent at the gym and calorie counting I found myself doing. I finally learned to embrace my new motherly figure and bought a new wardrobe to help flatter my newfound curves.
For the first time in my life, I felt comfortable in my own skin. However, despite all that, I made the conscious decision to monitor my weight moving forward in order to stay healthy and because quite frankly, I don’t have the available funds to spend on new clothes after this pregnancy. So, I’ve been careful about monitoring my weight this time around.
I’ve learned to curve my cravings by choosing ingredients that are more nutritionally dense. I find that by doing this, I require less of what I’m eating to feel satisfied. What better example than these flour-less black bean brownies? Honestly, they’re jam packed with protein, fiber, and essential vitamins and minerals that our body requires such as Vitamin B1, manganese, copper, and folate.
Now I wouldn’t go so far to calling these “guiltless” as you still need to monitor the amount you’re consuming. But what I’ve noticed is that after eating just one, I feel full and absolutely cannot eat any more…score!!
Flour-less chocolate chip black bean brownies
Here are the ingredients you’ll need (scroll down for recipe)
- Can of black bean brownies
- Nut butter (I chose peanut butter)
- Cocoa powder
- Vegan Butter. Here’s what I use: Earth Balance Organic Coconut Spread
- Maple syrup (or sweetener of your choice
- Vanilla extract
- Vegan chocolate chips. Here are the kind I use: Enjoy Life, Semi Sweet Chocolate Chip
- Baking Soda
- Baking Powder
- Optional vegan topping for frosting. Here’s what I use: Pascha fruit spread
Flour-less chocolate black-bean brownie recipe
These flour-less black bean brownies are decadent and jam packed with nutrients. A perfect healthy substitute for your classic favorite.
- 1 can black beans Rinsed and dried
- 1/2 cup maple syrup or agave or any sweetener of choice
- 1/3 cup cocoa powder
- 3 tbs vegan butter, softened coconut oil can be used instead
- 3 tbs peanut butter or nut butter of choice
- 2 tbs chocolate chips
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 1/4 tsp baking powder or cream of tarter
- 1/8 tsp salt
Blend all ingredients except for the chocolate chips in a high speed blender until very well combined.
Mix in the chocolate chips and pour into a lined brownie tin of choice.
Bake for 20-minutes at 370 degrees or until an inserted fork comes out clean.
After removing, brownies will still be soft. Let cool and harden and for best results, refrigerate before serving.
Optional: Add your choice of vegan frosting on top.
