I’d be lying if I said that I wasn’t struggling these days. Between the aches and pains of pregnancy, pure exhaustion of working full time, and making sure my toddler Isn’t destroying our place, I’m spent. Luckily, I have family that care so much about us and are willing to chip in and help when we need them!
If there’s one thing that I am trying to do more of, It’s taking care of myself, mentally, emotionally, spiritually, and physically. After all, I NEED to be strong, resilient, and healthy in order to take care of my home and family. There are days when I think that all hope is gone, but then I remind myself that I am stronger than I think.
Anyway! enough of my sob story! Let’s get to the good stuff. I tried a new recipe this week. I had seen it done by so many people but wanted to make my own version instead. I went ahead and swapped out ingredients and began to experiment in my kitchen. Love days like that!
As I’ve probably said in the past, I am an absolute sucker for chocolate. My love for it began at a very young age when my Dad introduced me to my first KitKat bar. Ever since then, I have been hooked with all things chocolate. I knew however, that if I wanted to live a healthy life, I needed to cut down on the amount I was eating.
I allowed myself to have at least 1 piece of chocolate (in any form) per day as long as I kept it in moderation. It helped to feed my craving and and prevented me from binge-eating.
Having always been a fan of incorporating fruits and veggies into my dessert, you might imagine my excitement as I came across a recipe for sweet potato brownies. Admittedly, I was a bit skeptical at first as I wasn’t sure how it would taste. After making these Sweet Potato Chocolate Chip Muffin Bites, I was hooked, and so was my toddler…SCORE!!
So…what’s in them exactly?
I decided to make a vegan version..you will need the following:
- Sweet potato
- Oat flour
- Peanut butter
- Ground flax seeds
- Vegan butter or coconut oil
- Granulated sugar and/or maple syrup
- Baking Soda
- Cocoa powder
- Vanilla extract
- Chocolate chips
You basically mix all of those ingredients together, pour, and bake. Then, something magical happens. You end up with the most delicious, moist, and fudge-y sweet potato muffins ever. As a self-proclaimed chocolate junkie, you can bet I have a knack for knowing true chocolate goodness and can trust that I wouldn’t steer you in the wrong direction! You NEED to make these! I had to watch my intake as I nearly inhaled 3 at once.
These are perfect anytime of the day and can be eaten before or after a workout for a quick boost of energy! I personally like that I can just grab ’em and go!
