Healthy Chocolate Peanut Butter Rice Krispie Treats

If there’s one thing that speaks to my childhood, It’s all of the different lunch box snacks my Mother used to pack me. From what I can remember, Rice Krispie Treats, were among some of my favorites.

It must of been their chewy texture, and the sweet smell of vanilla that enveloped your senses as you unwrapped them. Whatever it was, all I knew was that they always made me smile. Here I am reminiscing about the good ol’ days. I’ve been doing that a lot!

These days however, my metabolism won’t let me enjoy the classic taste of these heavenly delights. After all, just looking at them alone makes me gain 5 lbs. I was feeling a bit nostalgic this afternoon so I decided to get creative and swap out the marshmallows and butter for healthier alternatives.

What you’ll need:

  • Any puffed rice cereal
  • Any powdered peanut butter/peanut butter flour
  • Vanilla extract
  • Honey
  • Vegan butter (or coconut oil)
  • Vegan chocolate chips

Of course they taste nothing like the original but the texture is spot on! I do have to say that for a “healthy” version, they really aren’t that bad. My two-year old agrees as well!

Making these bad boys is super easy–just like the original recipe. I believe it only took me 5 minutes to prepare which was what sealed the deal for me. As I mention in practically every post of mine, I feel like I’m always looking for ways to beat clock and this includes preparing meals/snacks.

I didn’t feel guilty after eating these. They’re sweetened with honey, and contain less calories since I’ve used peanut butter flour instead of full-fat peanut butter. This alone cuts the calorie count in half.

If you wanted these to be a bit more chocolatey (and let’s be real, who WOULDN’T want that?), you could add a tbs or 2 of cocoa powder or up the chocolate chips. Make it your own!

Healthy Chocolate Peanut Butter Rice Krispie Treats


  • 4 cups of puffed/crisp rice cereal
  • 1/2 cup peanut butter flour (mixed with water)
  • 1/2 cup honey
  • 2 tbs vegan butter
  • 1-2 tbs vegan chocolate chips
  • 1 tsp vanilla extract


  1. Line an 8x8 baking pan lined with parchment paper to allow for easy lifting.
  2. Combine peanut butter, honey, butter, and vanilla extract in a medium saucepan and gently cook on medium heat until ingredients are melted and smooth.
  3. Add in the chocolate chips and mix until melted. Remove from heat.
  4. Add the mixture to the puffed rice, combining well.
  5. Pour mixture into pan, and place in refrigerator for 20-30 minutes.
  6. Remove, slice, and serve.
