I’m a sucker for Birthday cake flavored anything, and since these pregnancy cravings have me wanting more and more sweets lately (totally opposite of my last) I figured I’d give in and make a healthier version of my favorite.
These birthday cake chickpea cookies are everything you want in a cookie. They’re moist, sweet, and melt right in your mouth.
I do want to note that when making these, you need to be patient with the cooling and drying phase since there is a larger water content due to the chickpeas. So my suggestion? do not make these when you are very hungry…otherwise they will crumble and fall right apart since you’ll try to eat them right away…don’t say I didn’t warn you!
