Spicy Vegan and GF Pizza with cashew mozzarella and quinoa crust.

Howdy friends! It’s been a couple of weeks since I last posted anything and what better way to get back into the swing of things by bringing you a spicy vegan pizza?

My life has been hetic these day, between starting physical therapy, working on various freelance projects and trying to manage taking care of my family and home–blogging has fallen by the wayside. Also during this time, I adjusted what I was eating and gave up dairy and meat for exactly 2 weeks. It was tough and I felt like I was hungry ALL the time. After everything was said and done however, I managed to stay on track with giving up dairy…almost 3 weeks now and going strong! woo hoo! go me.

I did have to incorporate animal protein back into my diet, but I have chosen to stick with fish for now while I take a break from red meat and chicken. Why did I do this you ask? well for starters, I wanted to work on my self control but also, wanted to give my body a break from some of the well known inflammation causing foods.

So, what did I learn from this entire “vegan wannabe” ordeal? well, a couple of things actually. A), Middle Eastern food is 80% animal products (and there’s just NO way around that) and B), Vegan cheese sucks…really really bad. In fact, I hated vegan cheese so much that I decided to make my own version. This one tastes a helluva lot better, trust me! Now, admittedly, I wasn’t the genius behind this particular recipe but I did make make my own spicy twist to it. Plus, I’ve fumbled with making vegan cheese before and liked it.

I used a quinoa crust because who needs gluten? anyway, you have got to try this amazing vegan gluten free pizza! vegans, non-vegans, and vegan-wannabe’s like me, will all enjoy this!
