No- bake peanut butter energy bites recipe

These no-bake peanut butter energy bites are the perfect snack anytime. Not to mention, they’re chock full of protein, fiber, and omega-3 fatty acids. I remember making these years ago as a pre-workout snack. They always provided me with the energy that I needed while working out and would make an excellent post-workout snack as well.

I have made several variations of these protein bites but always come back to this recipe since it is my all-time favorite. My Hubby and 19-month old son love these as well!

I used organic peanut butter and shredded coconut flakes as part of this recipe. The only brand of coconut flakes that I use is the “Let’s do…Organic; check it out here. This recipe is vegan and gluten free (as long as you’re using gluten free oats). I have to admit that for being someone who isn’t a vegan, I sure eat like one on a regular basis. I guess part of me hopes to one day transition away from eating meat and dairy but I am just not sure I’d be committed enough at the moment.

No-bake peanut butter energy balls


  • 1 cup plain instant oats
  • 1/2 cup peanut butter (or any nut butter of your choice)
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup ground flaxseed
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cinnamon
  • Optional: 2 tbs chocolate chips or raisins


  1. Combine all ingredients together, form into bite size pieces and place in refrigerator for at least 30 minutes.

    This seems like an easy recipe and portable. I spend three hours a day communicating and need quick snacks that aren’t full of junk. I’m planning to make these this week 🙂
