I have to say I was a bit skeptical about this vegan healthy marshmallow fluff recipe until I actually tried it and realized that with just 3 unexpected ingredients, you can get pretty close to the real thing. It has a very meringue type of consistency but without the egg!
Ok so, I remember eating marshmallow fluff right out of the jar when I was growing up…did anyone else do that? I also did the same thing with Nutella…still do; don’t judge me! I came across this recipe while casually browsing Pinterest and oh em gee, I just had to share it with you all!
You’ll never guess what the main ingredient is…garbanzo bean water! you know when you open up a can of beans and drain the water? well now, you can actually use that water to make something creamy, light and delicious! you can thank me later. I know what you’re thinking, Innana, that sounds disgusting. Bear with me here. My Husband stood behind me and idly watched as I whipped up (literally) this concoction in absolute amazement. “It smells pretty good actually” he admittedly expressed as he got closer to get another whiff.
So you basically mix the water with a sweetener of your choice and add vanilla. Using a stand mixer or hand mixer, begin whipping it up. The process can take anywhere from 10-15 minutes until you see it begin to thicken up. This marshmallow fluff can be used as frosting or just eating straight with a spoon …whatever your little hearts desire!
If you try this recipe, please let me know if you have any other ideas for it…this was my first time trying it and really didnt find anything intersting to do with it. I was still in shock how clear liquid, mixed the right way, can end up looking like this…
